If you’re like me and can never decide between a gooey cinnamon roll and a classic French toast, I have the best news ever: you don’t have to! Today we are making the viral Cinnamon Roll French Toast. It’s buttery, sweet, and has that perfect cinnamon-swirl crust that will make your kitchen smell like a dream.
This isn’t just breakfast; it’s a weekend mood. Whether you’re hosting a brunch with the girls or just treating yourself on a Sunday morning, this recipe is a total showstopper.
Why This Recipe is Better Than the Rest
The secret is in the bread and the swirl. We aren’t just using plain slices; we are using thick-cut Brioche or Challah to soak up that delicious custard, and then we’re creating a “cinnamon roll” effect right on the griddle.
What You’ll Need for the Perfect Swirl
I’ve linked all my brunch must-haves on my Amazon Storefront to make your life easier! Here’s what’s on the list:
- Thick-Cut Brioche: This is the only way to get that soft, pillowy texture.
- Cinnamon Swirl Mixture: A blend of brown sugar, butter, and lots of cinnamon.
- Vanilla Extract & Nutmeg: The “secret” spices that make the custard taste professional.
- Cream Cheese Glaze: Because a cinnamon roll isn’t complete without that iconic drizzle.
Gabriela’s Pro-Tips for Brunch Success
- Stale is Better: Use bread that is a day or two old! Dry bread soaks up the custard much better without falling apart.
- Don’t Over-Soak: Just a quick dip on each side. If it sits too long in the milk mixture, it becomes soggy instead of custardy.
- The Sizzle: Make sure your pan is medium-hot with plenty of butter before the bread hits the surface. This creates that gorgeous golden-brown crust.
- The Glaze Drizzle: Apply the cream cheese glaze while the French toast is still warm so it melts slightly into every crevice.

The Ultimate Viral Cinnamon Roll French Toast
350kcal
Ingredients
- 1 can (12.4 oz) pack Refrigerated cinnamon rolls with icing
- 2 Large eggs
- 1/2 cup Whole milk
- 1 tsp vanilla extract
- 2 tbsp Butter for the skillet
- Maple syrup for serving
Method
- Open the pack of cinnamon rolls and place each one between two sheets of parchment paper, and flatten. Pierce the flattened rolls with a fork a few times each to help it soak up the french toast mixture in the next step
- In a bowl, whisk together the eggs, milk, and vanilla extract
- Dip the cinnamon rolls in the mixture
- In a pan sprayed with some cooking oil, cook the cinnamon rolls on medium low heat. Flatten them with the spatula as they rise. This helps it cook through more. Be careful not to burn them, because the cinnamon can burn.
- Flip them and cook for an additional 2-3 minutes.
- Add about 1/3 cup of water then cover with a lid so they can steam until the water evaporates

Storage Tip: These are best enjoyed fresh, but you can store leftovers in an airtight container in the fridge for up to 2 days. Simply reheat in a skillet with a tiny bit of butter to bring back that crispy edge.

The Viral Secret: For that extra "TikTok look," don't be shy with the icing! Drizzle it while the toast is still hot so it melts into all the cinnamon swirls.

Personally, I think the cream cheese glaze is all you need, but I won’t judge if you add a splash of maple syrup too!
