Ingredients

1 green pepper
1 red pepper
1 lb garlic (about 6-7 garlic heads)
5-6 Aji dulce peppers ( I have to substitute with 1 cubanelle pepper)
1 small white onion
2 bunches of cilantro
1 bunch of culantro
1 tbsp Salt
1/2 tbsp Pepper
1 tbsp Dominican oregano (if you can’t find any it’s ok to use regular oregano)
1/2 Cup Olive Oil
1/4 cup Vinegar
1 Lime
Dominican seasoning… the glue that holds all of our dishes together. Rice, beans, meats, fish etc. All Caribbean’s make their own version of this but it’s the staple in all of our dishes. Living in the U.S. it’s hard to find certain ingredients such as culantro (recao) and aji dulce (aji gustoso) unless you live somewhere like NY or FL. I have to substitute the aji dulce with cubanelle pepper and sometimes it’s a hit or miss finding culantro.

Instructions

1.Start off by washing, deseeding, and roughly chopping off all of your vegetables
2.Add all of the ingredients to a blender or food processor and store in a glass container in the fridge for up to 2-3 weeks
3.You can freeze the excess of what you won’t use up within the 2-3 weeks in an ice cube tray. Then you can just conveniently pop them out to cook as needed.

Ingredients

  • 1 green pepper
  • 1 red pepper
  • 5-6 Ají dulce peppers substitute with 1 Cubanelle pepper if needed
  • 1 lb garlic about 6-7 full garlic heads
  • 1 small white onion
  • 2 bunches of fresh cilantro
  • 1 bunch of culantro (recao)
  • 1 tbsp salt
  • 1/2 tbsp black pepper
  • 1 tbsp Dominican oregano
  • 1/2 cup olive oil
  • 1/4 cup vinegar
  • 1 lime juice

Method

  1. Preparation: Thoroughly wash all your vegetables.
  2. Chop: Deseed the peppers and roughly chop all vegetables into chunks that your blender can handle.
  3. Blend: Add all ingredients (vegetables, herbs, liquids, and spices) into a blender or food processor.
  4. Process: Blend until you reach your desired consistency (usually a slightly chunky paste).
  5. Store: Transfer the mixture into a clean glass container.

Notes

  • Storage: Keep it in the fridge for up to 2-3 weeks.
  • Pro Hack: Freeze excess sofrito in an ice cube tray. Once frozen, pop them into a freezer bag. You can then just drop a "sofrito cube" directly into your pot whenever you cook!
  • Substitutions: If you can't find Dominican oregano, regular oregano is fine, but the Dominican version adds that extra authentic aroma.
