About 2 cups of leftover rice
2 eggs
Mozzarella cheese or cheese of your choice
remember the amounts don’t have to be exact since this is meant to be to made from leftovers. You can add more salt if your rice wasn’t already seasoned enough. If you have less rice then only add one egg

Instructions

1.In a food processor, add your leftover rice and two eggs and blend
2.Shred your cheese and mix in
3.Form into balls and flatten into a round circle
4.Add oil to your pan and fry on both sides until golden brown and crispy

  • 2 large eggs
  • Mozzarella or your favorite melting cheese handful or to taste
  • 1–2 tbsp Oil for frying
  • A pinch of salt if your rice wasn't seasoned

Method

  1. Blend: In a food processor, combine the leftover rice and the eggs. Blend until you have a thick, moldable paste.
  2. Add Cheese: Shred your cheese and fold it into the rice mixture. Mix until evenly distributed.
  3. Shape: Scoop a small amount of the mixture and form it into a ball, then flatten it between your palms into a round disc.
  4. Fry: Heat oil in a pan over medium heat. Fry the arepas on both sides until they are deep golden brown and crispy.
  5. Serve: Enjoy them warm while the cheese is still melty!
