Ingredients

For the Crust:
8.8 oz package of Biscoff cookies
1/2 cup unsalted melted butter
For the Cheesecake:
1 1/2 cups Heavy Cream
16 oz Cream Cheese ROOM TEMP
3/4 of Biscoff Butter Container
1/2 cup Powdered Sugar

Instructions

1.Prepare the Biscoff Cheesecake Crust: Start by making the Biscoff cookie crust. Crush the pack of Lotus Biscoff cookies into fine crumbs, setting aside about 7 cookies for decorating the cheesecake later.
2.Transfer the crushed cookies to a bowl and pour in the melted butter. Mix well until the crumbs are evenly coated and resemble wet sand.
3.Press the cookie mixture firmly into the bottom of a round springform pan to create an even crust. Cover the pan and place it in the refrigerator while you prepare the no-bake cheesecake filling.
4.Make the Biscoff Cheesecake Filling: In a large mixing bowl, add the room temperature cream cheese, powdered sugar, and about ¾ of the Biscoff spread (approximately 1 cup). Mix until smooth and fully combined.
5.This mixture will create the rich base for the Lotus Biscoff no bake cheesecake filling.
6.Whip the Heavy Cream: In a separate bowl, add 1 ½ cups heavy cream. Using a mixer, whip the cream until stiff peaks form. This step is important because the whipped cream helps the no-bake cheesecake set properly without baking.
7.Gently fold the whipped cream into the Biscoff cream cheese mixture until fully combined.
8.Do this step by hand using a spatula, folding slowly instead of stirring. Overmixing can deflate the whipped cream and cause the no-bake cheesecake filling to become dense or flat instead of light and creamy.
9.Assemble the No-Bake Cheesecake:
10.Remove the prepared crust from the refrigerator. Pour the Lotus Biscoff cheesecake filling over the chilled crust and spread it evenly with a spatula, smoothing the top.
11.over the cheesecake and place it back into the refrigerator for at least 4 hours, or preferably overnight, so the cheesecake can fully set.
12.Add the Biscoff Topping and Decoration:
13.Once the cheesecake is fully set, gently warm the remaining Biscoff spread until it becomes smooth and pourable. Carefully pour it over the top of the cheesecake and spread evenly.
14.Crush the reserved Biscoff cookies and sprinkle them around the edges and center of the cheesecake. For decoration, place a few halved Biscoff cookies around the edge of the cheesecake for a beautiful finishing touch.
15.Slice and Serve:
16.Slice the Lotus Biscoff no bake cheesecake with a warm knife for clean cuts and serve chilled. This creamy, rich Biscoff dessert is perfect for Ramadan iftar gatherings, celebrations, or any time you want an easy no-bake cheesecake.

Lotus Biscoff No Bake Cheesecake | Easy Creamy Biscoff Dessert

lotus biscoff no bake cheese cake recipe

Lotus Biscoff No Bake Cheesecake has easily become one of my most requested desserts this Ramadan, and honestly, I completely understand why. It’s creamy, rich, packed with warm caramelized Biscoff flavor, and best of all — it requires absolutely no baking. During Ramadan, when energy is lower by the end of the day and time feels limited between iftar, prayer, and family time, having a simple no-bake dessert like this makes everything easier.

What I love most about this Lotus Biscoff No Bake Cheesecake is how effortless it feels while still looking and tasting impressive. It’s the kind of dessert that people assume took hours to prepare, when in reality it comes together quickly with minimal steps. That’s exactly the type of recipe I find myself reaching for throughout Ramadan — something reliable, simple, and guaranteed to make everyone happy after iftar.

This year especially, it has truly been my most requested dish all Ramadan long. I’m not exaggerating when I say I’m pretty sure I’ve gone through more than 20 containers of Biscoff spread this month alone because of how often my friends and family ask me to make it. Every gathering, every iftar invite, someone always asks, “Are you bringing the cheesecake?” And honestly, I don’t mind at all because I know it will disappear within minutes every single time.

One of the biggest reasons this dessert works so well for Ramadan is its make-ahead convenience. After a long fasting day, the last thing I want to do is spend hours in the kitchen preparing dessert. This no-bake cheesecake solves that completely. I can prepare it earlier in the day or even the night before, let it chill in the fridge, and it’s ready to serve right after iftar with zero stress. That kind of ease is priceless during Ramadan when your schedule revolves around prayer times and family routines.

The flavor itself is another reason this recipe stands out. Biscoff has that deep caramelized spice flavor that feels comforting and indulgent without being overly sweet. Combined with the creamy cheesecake filling and buttery cookie crust, every bite feels balanced and satisfying. After fasting all day, desserts that are too heavy or overly sugary can feel overwhelming, but this one hits the perfect middle ground.

I also love how visually beautiful this dessert looks once sliced. The smooth creamy filling, golden cookie base, and glossy Biscoff topping make it feel elegant enough for gatherings while still being incredibly simple to prepare. It’s one of those desserts that looks impressive on the table without requiring complicated techniques or equipment.

Another reason I keep coming back to this recipe is how dependable it is. With baking, there’s always the risk of overbaking, underbaking, or worrying about cracks. But with a no-bake cheesecake, the process feels much more forgiving. As long as you allow enough chill time, the texture turns out creamy, smooth, and perfect every time.

Ramadan cooking for me is always about balance — creating meals that feel comforting while also being practical. This Lotus Biscoff No Bake Cheesecake checks every box. It’s simple, delicious, make-ahead friendly, and universally loved. Whether I’m hosting iftar at home or bringing something to share, I know this dessert will always be a success.

If you’re looking for a stress-free dessert that still feels special, this is truly the one to make. Between its creamy texture, rich Biscoff flavor, and effortless preparation, it’s no surprise it has become such a favorite in my kitchen this Ramadan. And judging by how fast it disappears every time I serve it, I have a feeling I’ll still be making it long after Ramadan ends.

Notes

• For the best Lotus Biscoff no bake cheesecake, make sure your cream cheese is fully softened before mixing to prevent lumps and create a smooth, creamy filling.
• Whip the heavy cream to stiff peaks — this helps the no bake cheesecake set properly without gelatin or baking.
• Gently fold the whipped cream into the Biscoff mixture so the filling stays light, airy, and stable after chilling.
• Chill the cheesecake for at least 6 hours (overnight is best) so the Biscoff cheesecake filling firms up and slices cleanly.
• Warm the Biscoff spread slightly before pouring over the top so it spreads evenly without pulling the filling underneath.
• Press the Biscoff cookie crust very firmly into the pan so your no bake cheesecake crust holds together when slicing.
• For clean slices, use a hot knife and wipe between cuts — this helps maintain smooth edges on your Biscoff cheesecake slices
• Store covered in the fridge for up to 4 days; this dessert is perfect to make ahead for Ramadan iftar gatherings.
