Ingredients

The Dubai Filling
  • 60 grams Kataifi pastry finely chopped
  • 15 grams Unsalted butter
  • 100 grams Pistachio cream/spread

The French Toast
  • 2 large Eggs
  • 60 ml Whole milk
  • 1 tsp Vanilla extract
  • 20 grams Butter for frying

Method

  1. Prepare the Crunch: Melt 15g of butter in a pan. Add the chopped kataifi and toast over medium heat until golden brown and very crispy. Let it cool.
  2. Make the Filling: In a small bowl, mix the toasted kataifi with the pistachio cream (and tahini if using) until well combined.
  3. Stuff the Bread: Spread a thick layer of the pistachio mixture onto two slices of brioche, then top with the remaining two slices to make sandwiches.
  4. Cut: Slice each sandwich into 3 or 4 thick sticks.
  5. Batter: Whisk the eggs, milk, and vanilla in a shallow bowl.
  6. Cook: Briefly dip each stick into the egg mixture (don't soak them!). Melt butter in a skillet over medium heat and fry the sticks until golden brown on all sides.
  7. Final Touch: Drizzle the melted milk chocolate over the warm sticks and sprinkle with crushed pistachios for that iconic Dubai Bar look.
