Method
Prepare the Crunch: Melt 15g of butter in a pan. Add the chopped kataifi and toast over medium heat until golden brown and very crispy. Let it cool.
Make the Filling: In a small bowl, mix the toasted kataifi with the pistachio cream (and tahini if using) until well combined.
Stuff the Bread: Spread a thick layer of the pistachio mixture onto two slices of brioche, then top with the remaining two slices to make sandwiches.
Cut: Slice each sandwich into 3 or 4 thick sticks.
Batter: Whisk the eggs, milk, and vanilla in a shallow bowl.
Cook: Briefly dip each stick into the egg mixture (don't soak them!). Melt butter in a skillet over medium heat and fry the sticks until golden brown on all sides.
Final Touch: Drizzle the melted milk chocolate over the warm sticks and sprinkle with crushed pistachios for that iconic Dubai Bar look.
Pro Tip: To keep the filling from leaking, don't spread the pistachio mixture all the way to the very edges of the bread before cutting.
Kataifi: You can find kataifi in most Middle Eastern grocery stores or online. If you can't find it, crushed toasted vermicelli is a desperate but functional substitute!
Serving: Best served immediately while the inside is warm and the outside is crispy.
