For the seasoned chicken:
2boneless chicken breast
1 tspsalt
1 tbspblack pepper
1 tsponion powder
1tbspsmoked paprika powder
2tbspavocado oil
For the dry batter:
2cupsall purpose flour
1 tbspsmoked paprika powder
1tbspgarlic powder
1tspblack pepper
2tspsalt
1tsponion powder
For the breadcrumbs:
2cupspanko bread crumbs (you can use regular bread crumbs, I think next time I will just use regular bread crumbs because the panko bread crumbs I used were pretty big)
1tbspdried parsley
For the Egg Wash:
1whole egg
1cupwater
Method
First, cut the chicken breast into long strips, pat dry, and add to a mixing bowl
Season the chicken strips with salt, pepper, paprika powder, garlic powder, and onion powder. Then drizzle the 2 tbsp on oil. Marinate it for 1-2 hours in the fridge
To make the dry batter, in a bowl add and mix together the flour, salt, pepper, paprika powder, onion powder, garlic powder.
For the egg wash, combine the water and egg and whisk well.
In a separate tray, add the bread crumbs and parsley and mix well
First coat the chicken in the dry batter then egg
Then flour again, egg again, then the bread crumbs.
Heat the oil to 350º F then add the coated chicken strips.
Cook for 2-3 min until golden and crispy, or until the internal temp reaches 165ºF.
