Ingredients

4 room temp eggs
2 cups white sugar
3/4 cup cocoa powder
1/2 cup flour
vanilla bean paste to taste (1-2tsp)
2 sticked unsalted melted butter

Instructions

1.In a mixer, add whisk the eggs, sugar, and vanilla bean paste until light and airy
2.In another bowl mix together the cocoa powder and flour (you’re supposed to sift but I didn’t)
3.On low speed, add the cocoa/flour mixture to the kitchen mixer
4.Melt the sticks of butter and slowly add on low speed.
5. In a greased 9×12 in pan, add the brownie mixture
6.Add to a water bath
7.Bake at 325° for 55 minutes
8.Enjoy!! and serve with ice cream

Ingredients

The Dubai Filling
  • 115 grams Unsalted butter melted
  • 200 grams Granulated sugar
  • 125 grams All-purpose flour
  • 40 grams Cocoa powder unsweetened
  • 1 tsp Baking powder
  • 1 pinch Salt
  • 120 ml Whole milk melted
  • 1 tsp Vanilla extract for frying
  • 100 grams Chocolate chips Semi-sweet or milk chocolate
  • 180 ml Hot water to be poured over the top before baking

Method

  1. Preheat: Preheat your oven to 350°F (175°C) and lightly grease an 8x8 inch (20x20cm) baking dish.
  2. Mix Dry: In a large bowl, whisk together the flour, 150g of the sugar, 20g of the cocoa powder, baking powder, and salt.
  3. Mix Wet: Stir in the milk, melted butter, and vanilla extract until the batter is smooth. Fold in the chocolate chips.
  4. Spread: Pour the batter into the prepared baking dish and spread it evenly.
  5. The Topping: In a small bowl, mix the remaining 50g of sugar and 20g of cocoa powder. Sprinkle this mixture evenly over the top of the batter.
  6. The Magic Step: Carefully pour the hot water over the entire surface. Do not stir! This creates the "pudding" layer at the bottom while baking.
  7. Bake: Bake for 25–30 minutes. The top should be set and crackly, but the center will still be very wobbly and gooey.
  8. Rest: Let it cool for 5–10 minutes before serving. This allows the sauce to thicken.

Notes

  • Serving Suggestion: This is 100% better served warm with cold vanilla ice cream or a splash of heavy cream.
